Time was when Scottish cooking was known largely for acquired tastes like sheep’s stomach stuffed with entrails [haggis] and such crimes against cuisine as deep-fried Mars Bars. 

All that has changed – today its capital, Edinburgh, boasts world-class restaurants and the land is "a larder that’s the envy of the world”. It’s also produced such Caledonian culinary kings as Kitchin – now a household name (groan). 

This well-crafted short documentary, titled Refining Taste, was created in-house by GQ publisher Condé Nast with production service company LS Productions and features Kitchin gliding in his Lexus RX through jaw-dropping scenery, seeking out and extolling the country’s natural ingredients. 

Talking about working with seasonality he praises “the cycle of produce and life; the cycle of gastronomony”. It’s a sensual film that sees him trudging through dewy undergrowth, sniffing a forest’s fragrant mushrooms, and lifting a cool fish from a sun-dappled stream. Satisfying.
